These cookies contain only whole grains and; because apple butter, honey, and Splenda replace most of the table sugar; are very low in refined carbohydrates (less than 5 grams processed sugars per cookie, which is about one teaspoon of sugar). Ingredients

1/2 cup butter (one stick)
2 1/4 cups Bob's Red Mill Whole Wheat Pastry Flour
1/4 cup Splenda Sugar Blend for Baking
1/4 cup Splenda Brown Sugar Blend
1 large egg
1/2 cup apple butter (or, in a pinch, a fruit puree such as applesauce or pears)
1 tbsp honey
1/2 tsp cinnamon
1/4 teaspoon ginger
1/4 tsp cloves
1/4 tsp salt
1/2 tsp baking powder
Directions
1. Cream butter and Splenda blends in a large mixing bowl.
2. Beat in egg, honey, and apple butter.
3. In another bowl combine flour, cinnamon, ginger, cloves, baking powder, and salt.
4. Add the flour mixture, in thirds, to the butter and sugar mixture and mix until blended.
5. Wrap dough in plastic wrap and chill for about 1 hour.
6. Preheat oven to 375° F.
7. Lightly grease or spray 2 cookie sheets.
8. Roll dough into one-inch balls; place 3 inches apart on cookie sheets.
9. Flatten each ball of dough with a fork.
10. Bake for 10-12 minutes.
