Ingredients

    2 cups old-fashioned rolled oats
    2 cups puffed brown rice cereal
    4-1/2 oz. slivered almonds
    2 T. flaxseed
    2 T. sesame seeds
    1 cup currants or raisins
    200g. or 1 full cup chopped dried apricots
    1/2 cup tahini or almond butter
    150g (1/2 cup) honey
    70g (1/2 cup) sucanat or brown sugar
    1/4 tsp. salt
    1 tsp. vanilla

Directions

Preheat oven to 350. Coat a 9"x13" baking pan with cooking spray. Spread oats, almonds, flaxseeds and sesame seeds on a large, rimmed baking sheet or two. Bake until the oats are lightly toasted and the nuts are fragrant. shaking pan halfway through, about 10 minutes. Transfer to a large bowl. Add cereal, currants and apricots; toss to combine.
In a large glass bowl, combine tahini or almond butter, honey, sucanat and salt.. Microwave on high for 3 minutes, stirring every minute. Stir in the vanilla and mix well. Add dry ingredients to the mixture and mix well. Dump into the prepared 9"x13" pan. Spray hands with cooking spray and pat evenly into pan. Let cool completely before cutting. Cut into 24 bars.
