Introduction
Grandma used to make these foil packets with hamburger for the kids, because we didn't like roast. She'd make the roast, then take out a few potatoes and carrots and put them on the hamburgers and lay the foil packets next to the roasting pan in the oven. We loved having our own individual meals! Ingredients

1 lb. 93% lean ground beef
1 tsp. kosher salt
1/2 tsp. black pepper
1 tbsp. dried minced onion (or 2 tbsp. finely minced onion)
2 cloves of garlic, minced (or 1/2 tsp. garlic powder)
3 medium potatoes
2 large carrots
1 tsp. seasoning salt (like Lawry's)
heavy duty aluminum foil
Directions
Makes 6 servings
1. Preheat grill. Cut or tear foil into 6 pieces, about 12" square.
2. Place ground beef in a bowl. Add salt, pepper, onion and garlic. Mix gently.
3. Divide into 6 pieces and press into 1/2" patties. Lay one in the center of each of the foil squares.
4. If desired, peel each potato. Slice into very thin slices, about 1/8". This is easier if you use a mandolin. Place 1/2 of each potato in an even layer on top of a patty.
5. Slice each carrot into very thin slices (about 1/8"). Divide evenly between 6 patties. Place in a thin layer on top of potatoes.
6. Sprinkle top of vegetables lightly with seasoning salt. Fold corners of foil together tightly. Place packets on grill and cook until meat is done all the way through and potatoes and carrots are tender.
NOTES: If you like your carrots very tender and soft, you may want to pre-steam them briefly before you place on potatoes. Otherwise, carrots will be crisper than the potatoes. Also, if using a gas grill, you may need to move the packets away from the heat to finish cooking the vegetables without overcooking the meat.
