Introduction

Ingredients

    Carrots, raw, 4 large (7-1/4" to 8-1/2" long)
    Celery, raw, 2 cup, diced
    Onions, raw, 2 cup, chopped
    Peppers, sweet, red, raw, sliced, 1 cup
    cook's bone in ham shank portion
    split peas, dry, 2 cup
    lentils, dry, 2 cup

Directions

Cover ingredients with water, add a couple of bay leaves, herbs de provence or other spices/herbs as desired. Can also add some minced garlic cloves. Simmer for a few hours until everything is tender. Remove ham bone and take off remaining meat, add to soup.
