Introduction
Very quick to make - essential when only a slice of cake will do. Very quick to make - essential when only a slice of cake will do.Number of Servings: 8
Ingredients

125g plain flour
125g granulated sugar
6 small (or 4 medium) eggs
1 heaped teaspoon baking powder
3 tablespoons of jam (jelly)
Directions
Makes 8 slices
Line an 8 inch cake pan - I use silicone paper. Heat the oven to 400f
Put eggs and sugar in to a bowl and beat until pale yellow and increased x 3 in volume.
Then slowly add the flour and baking powder passing it through a sieve from about 15 inches above the bowl - the aim is to get lots of air in to the mix. Then, using a metal spoon, fold in the flour using a figure 8 and cutting motion so as not to beat out the air bubbles.
Turn the mixture in to the lined baking pan and bake for 35 mins.
Allow to cook then cut in half sideways and sandwich together with the jam (jelly)
Options -
- sandwich together with semi-pureed fresh fruit
- grate in some orange zest and sandwich together with marmalade
- substitute 25g of the flour for 25g good quality cocoa powder - use cherry jam to sandwich the chocolate cake - yummy!
