    2 tbsp Butter
    1.5 c flour, sifted
    2 ea eggs, large
    2 ea egg yolks, large
    2 c milk, lowfat
    3 tsp sugar, granulated
    1 pinch salt
    10 oz ricotta
    .25 c sugar, granulated
    1 tsp vanilla extract
    1 pt strawberries, fresh, hulled and crushed
    1 c strawberries, fresh, sliced
    1 c bananas, fresh, sliced


1. Melt butter and set aside.
2. In a bowl, prepare the batter by mixing the flour, eggs and egg yolks, milk, tbsp sugar, and salt. Blend well.
3. Heat a 6 inch skillet or crepe pan and brush it with the melted butter.
4. Pour about 3 tbsp of the batter into the pan and tilt pan to spread batter over the entire bottom. Cook on both sides. Stack crepes as they are cooked. Cover them with wax paper until they are to be filled.
5. To make filling, cream the ricotta with the sugar and vanilla. Add in the crushed strawberries and mix gently.
6. Spoon some of the filling down the center of each crepe and foll up the crepe.
7. Top crepes with mixture of sliced strawberries and sliced bananas.
