Ingredients

1 Large Eggplant
7 thin slices of tomato
7 large basil leaves
7 thin slices of mozzarella cheese
Olive Oil for brushing on top
Basalmic Vinegar (optional)
Directions
Cut eggplant into thin slices as if cutting slices of bread. Sprinkle salt on both sides of each slice and let set for 20 minutes. Rinse then pat dry.
Line broiler with foil and preheat.
Place eggplant directly on foil lined rack and lightly brush oil on the tops. Broil 8-10 minutes turning once during cooking.
Place one slice of cheese, tomato, and one basil leaf in the center of each eggplant slice. Fold sides of eggplant to the center and put back in broiler seam side down. Broil until cheese has melted.
Serve hot with basalmic vinegar.
One serving is 2 sandwiches.
Depending on the size of eggplant and the thickness of slices, this makes aprox. 7 sandwiches.
