Ingredients

    1. 5 whole Jalapeño peppers, sliced in half lengthwise. Seeds and stems removed.

    2. One boneless skinless chicken breast chopped finely.

    3. 1/4 of a white onion chopped finely

    4. 1/4 cup tomato chopped finely.

    5. 2 Tbs. Fat free sour cream

    6. 1/2 cup shredded cheddar cheese.

Directions

1. You will probably want to wear gloves while working with the jalapeños to avoid burning your skin. Wash jalapeños. Slice the jalapeños along the length and remove all seeds. Rinse jalapeños.

2. After preparing jalapeño peppers by removing seeds place on a pan and roast them while you prepare the filling.

3. Chop chicken breast very fine. Put onion and chicken into a pan and cook until chicken is done. Remove from heat.

4. Place chicken, onion, sour cream, tomato and 1/4 cup cheese into a bowl. Mix. Keep 1/4 cup of cheddar cheese separate.

5. Remove jalapeños from oven. Place filling into jalapeños and place back into oven for 20 minutes.

6. Remove from oven cover top of each filled jalapeño with remaining cheddar cheese. Place back into oven for 10 minutes.

7. Remove from oven and serve as an appetizer. Each serving is 2 halves of stuffed jalapeños. This recipe makes 5 servings.

I did not cry when I ate these but people who do not care for spicy food will not like this recipe.
