Introduction

A great summertime (or anytime) chicken salad- quick, easy and nutritious. It's especially great if you can get very fresh basil and spinach. You can also use rotisserie chicken, leftover chicken, or whatever works for you. A great summertime (or anytime) chicken salad- quick, easy and nutritious. Ingredients

    1 12.5 oz. can of chunk chicken breast
    Large bunch of basil leaves, chopped
    2 cups of spinach leaves, chopped
    2 oz of shredded part-skim mozzarella (the fresh kind chopped is even better)
    1 cup of cherry tomatoes, chopped
    6 tsp of Kraft light basalmic vinagrette dressing
    6 Flatout garden spinach wraps

Directions

Roughly chop the basil and spinach together.
Quarter or halve the tomatoes.
Toss together the rest of the ingredients, expect the flatbread.
Put 1/6 of the mixture on the flatbread, wrap up and enjoy!

    Incredible!
    This was really delicious! I was lucky enough to get fresh mozzarella from the local cheese house but otherwise I used this recipe! I love the Caprese Salad but never thought of putting it in a tortilla before. Thank you! - 4/8/11
