Introduction

Ground Turkey Enchilada Casserole (adapted from another recipe for lower fat) Ground Turkey Enchilada Casserole (adapted from another recipe for lower fat)
Number of Servings: 12

Ingredients

    Huneysuckle White Ground Turkey 93/7, 16 oz
    Bush's, Black Beans, 1.5 cup
    *Old el Paso Refried Beans - Fat Free, 1.5 cup
    Tomato Paste, 1 can (6 oz)
    El Pato Enchilada Sauce, 28 oz
    Borden Finely Shredded Sharp Cheddar, 1.5 cup
    Mission Whole Wheat 8 inch Tortilla, 6 serving

Directions

Spray bottom of baking pan, 9x13.
Brown ground turkey and then add black beans and enchilada sauce.
Spread just enough of the sauce to coat the bottom of the pan and then line the pan with 3 tortilla's ( I break them in half and put the broken edge to the pan edge)
Spready 1/2 of refried beans on tort's, then 1/2 of the sauce, 1/2 of the cheddar and repeat.

Cook in 350 degree oven for 25 minutes or so.

Makes 12, 1 cup servings.

    Yummy! I made this without the tomato paste and really enjoyed it fresh from the oven and as leftovers. This recipe will be included in the permanent dinner rotation. Thanks for an exciting and tasty meal. - 6/17/09

    I'm assuming the tomato paste goes in with the sauce mixture. Used it that way and it was very good. I added a little Frank's Red Hot at the end to spice it up just a bit. Everyone loved it! - 11/21/08

    I added corn to the filling and mixed the tomato paste (along with water and seasoning) in with the enchilada sauce. Even my boyfriend, who hates all things diet loved it! - 9/23/07
