Wonderful lite Italian favorite. Wonderful lite Italian favorite.
Number of Servings: 5

Ingredients

    14-1/2 oz can of stewed tomatoes, no salt added
    2 tbsp organic tomato paste
    3 skinless, boneless chicken breasts cut into halves
    16 oz. healthy low carb pasta
    Italian seasonings
    1 tbsp olive oil
    1/4 cup of onions
    Cooking spray
    4 oz. part-skim mozzarella cheese

Directions

Cook penne pasta according to package directions.
Cut the chicken in half, season if you wish, spray the saute' pan with cooking spray.
Cook the chicken on medium heat until lightly brown on both sides.
Take the chicken out.
Add olive oil to pan and brown the onions slightly.
Place stewed tomatoes, tomato paste, Italian seasonings and any other seasonings you wish into pan; cook until bubbling.
Once it's bubbling place chicken back in the pan.
Place cheese on top of the chicken and put cover on to allow cheese to melt.
