Ingredients

1 c Whole Wheat Flour
3/4 c All Purpose Unbleached Flour
1/3 c No-Calorie Sweetener
2 t Baking Powder
1/8 t Low-Sodium Salt Blend
1 Large Egg
1/2 c Skim Milk
1/8 c Finely Chopped Almonds
1/2 c Mashed Banana
1/4 c Unsweetened Applesauce
1/8 t Vanilla Extract
1/8 t Cinnamon
1/8 t Nutmeg
Directions
Combine egg, milk, bananas, applesauce and vanilla in a small bowl; set aside.
Combine all remaining ingredients in a medium bowl.
Make a well in the middle of the dry ingredients and add wet ingredients.
Mix until just moistened (batter will be lumpy).
Spoon into greased mini muffin pans.
Bake at 400 for 15 minutes or until toothpick comes out clean.
Makes 24 mini muffins.
