Ingredients

2 c. Fiber One cereal
3/4 c. hot water
1/4 c. Plain Fat free yogurt
3/4 c. lowfat buttermilk
1/4 c. orange juice
2 Tbsp. molasses
2 Tbsp. honey
1/4 c. egg beaters
1 1/4 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 c. raisins
1 1/2 Tbsp. granulated sugar
1 1/2 Tbsp. orange juice
Directions
1. Preheat over to 400 degrees. In a medium bowl, mix ceral water, and yogurt until soft.
2. In another bowl mix the buttermilk, 1/4 c. orange juice, molasses, honey, and egg substitute. Add to the ceral mixture and mix well.
3. In a large bowl mix the flour, baking soda and salt. Add the cereal/buttermilk mixture and stir just until incorporated. Stir in the raisins. DO NOT overmix.
4. Coat a 12-muffin pan with non-stick cooking spray. Divide the batter evenly amonst the cups. Bake at 400 degrees for 15 minutes or until a toothpick inserted comes out clean. Cool on a wire rack.
5. For the glaze, mix the 1 1/2 T. orange juice and 1 1/2 T. granulated sugar in a small saucepan. Bring to a boil and stir to dissolve the sugar. Brush on top of the muffins with pastry brush.
