Ingredients

Pilau spice
1½ tbsp Cumin
1 tbsp Cardamon
½ tsp Black pepper
½ tsp Cinnamon
½ tsp Cloves
2 cups raw rice
4 cups cold water
1 large onion, diced
1 large green pepper (or red) diced
1 large carrot diced
1 cup diced celery
3 cloves garlic minced
1 tablespoon olive oil
1 can beans (your choice)
Directions
In a small bowl, mix the pilau spices together. Set aside
In a large dutch oven place the rice and water. Add 1 Tablespoon of pilau spice to water and begin cooking on high. When it begins to boil, turn to a simmer (low), stir and cover.
In a fry pan add the olive oil, and vegetables. cook until tender (about 5 minutes or so). Add to rice, stir and cook until all liquid is absorbed.
Add beans, heat til warmed. serve warm in bowls. Salt and pepper to taste.
Pilau spice is an aquired taste and you can add more or less. I suggest you start as directed. The rice will look "dirty"
You can add peanuts if you desire or soy (edemante) beans. You can add whatever you like!
