Low-fat Ice Cream Bread

Contrary to popular belief low-fat ice cream DOES work in this bread! I tried it both with low-fat and full fat ice cream and have found no difference.

Contrary to popular belief low-fat ice cream DOES work in this bread! I tried it both with low-fat and full fat ice cream and have found no difference.

Ingredients

    2 c. Edy's Slow Churned Caramel Delight Ice Cream, softened
    1 1/2 c. Flour
    3 tsp. Baking Powder
    1 tsp. Salt
    Margarine (not included in nutritional info)

Directions

1.) Set the oven to 350 and grease two 5-3/4-in. x 3-in. x 2-in. loaf pans.
2.) In a bowl, combine all the ingredients together and transfer the mix to the loaf pans.

Bake for 25-30 min. until a toothpick comes out clean. Then cool for 10 min., cut into 20 half in. pieces, spread with a little margarine and enjoy!
