Introduction

Ingredients

    1 cup raisins
    1/4 cup water
    1/4 cup rum
    1/4 cup stick margarine
    3/4 cup sugar (I use brown - adds more flavour)
    1 large egg
    1 tsp vanilla extract
    1/2 cup light sour cream
    1 1/2 cups all purpose whole wheat flour
    1 tsp ground cinnamon
    1/2 tsp baking soda
    1/4 tsp salt

Directions

Combine the raisins, water and rum in a small saucepan. Bring to a boil, then reduce to simmer. Simmer until the raisins are plump and the liquid has evaporated. Allow to cool completely.

Preheat the oven to 350F. Spray cookie sheets with nonstick cooking spray; set aside.

In large bowl, beat margarine and sugar until well combined (mixture should have the consistency of wet sand). beat in egg and vanilla until smooth.

In medium bowl, combine the flour through salt. Add half of hte flour mixture to teh sugar mixture. Gently stir in the raisins and sour cream. Add the remaining flour mixture, stirring just until blended.

Drop spoonfuls of dough 2 inches apart onto prepared cookie sheets. Bake in preheated oven for 12 to 15 minutes, until cookies are set but ont yet golden. Allow to cool slightly on the pan before removing to a wire rack to cool completely.

Makes 24 cookies.

    the cookies are delish! but this recipe doesn't tell you when to add the cinnamon and baking soda. i'm not a baker! when do you add those? thanks! - 1/27/08
