Ingredients

2 lbs yellow squash, crookneck or straight
3 large eggs
1 Spanish or Vidalia onion, medium, chopped
1 Box chicken-flavored Stovetop Stuffing (or 2 1/2 cup stuffing or bread crumbs)
1 can cream of mushroom soup
1 tsp salt
1/2 tsp pepper
1/2 cup margarine or butter, melted
1 cup plus 1/4 cup sharp cheddar cheese, grated
Directions
Cut squash in cubes. Boil or steam with chopped onion about 10 minutes until al dente (soft but not mushy). Drain. Place in large bowl and mash coarsely. Beat in 1 cup grated cheese, salt and pepper. Stir mixture into mashed squash and onion. Mix half of stuffing mix and whole can of soup into squash mixture.
Place in buttered (or sprayed with cooking spray) 13 x9 x 2 bakeware. Sprinkle remaining 1/4 cup of cheese on top. Bake in oven for 35 minutes and slightly browned on top. Let stand 10 minutes before serving.
Makes 8-10 servings.
