Ingredients

    10 thawed spinach
    3 cloves chopped garlic
    1 cup chopped yellow or red bell pepper
    1 cup chopped white or yello onion
    4 egg whites, 1 whole egg beaten
    1 cup shredded cheese, your choice
    5 slices healthy style canadian bacon (Trader Joes)
    salt and pepper to taste

Directions

mix all ingredients, pour into 12 foil cupcake liners, cook at 350 for 20 minutes or until egg no longer jiggly. Good warm or cold. great for on the run breakfast 2 muffins=1 serving. Get creative with veggies added
