Number of Servings: 16


    1/3 C Canola Oil
    1 large Egg
    1/2 C nonfat Milk
    2 cups Post Raisin Bran Cereal
    1 1/2 cups chopped Apples
    1/4 C Brown Sugar
    1/2 C Sucralose (like Splenda
    1/2 tsp Salt
    1 tsp Baking Soda
    3 tsp Baking Powder
    1/2 cup dry Cake mix (yellow, white, or spice)
    1/2 cup Whole Wheat Flour
    1/2 cup Cake flour
    1/2 cup Raisins


Mix all ingredients...I often load them into my bread machine to mix. I scrape the sides after the first 5 minutes, and let it mix for aobut 5 additional minutes.
Pour into lined muffin pans and bake at 325 for 25 minutes.
Makes 16 muffins.
