Introduction

This recipe is better, like usual, with full fat ingredients, but I like it so much that it's worth it to adapt so I can have it more often! Chicken with a cream sauce, is also great with pasta since you can use the sauce for both. Ingredients

    4 chicken breasts
    3 oz neufchatel cheese (1/3 less fat than cream cheese, or no fat cream cheese if you prefer)
    3/4 C half and half
    juice of 1 lime
    salt and pepper to taste
    1/2 C chopped fresh cilantro
    1 T Butter/light margarine

Directions

Saute chicken butter until cooked through and season to taste with salt and pepper. I usually cut the chicken into smaller pieces, about 3 pieces per breast. This recipe's serving size is an entire chicken breast, but you could certainly eat less.

Remove chicken from pan. Add cream cheese/neufchatel cheese in cubes with butter and drippings. Add half and half, lime juice, and cilantro. On medium stir until melted. Add chicken, cover, and cook on low for 15 minutes.
