Ingredients

    3 large eggs
    1 block extra firm tofu
    1 tablespoon wheat flour
    1 cup shredded cheese
    3 cups of veggies (I used sun dried tomatoes, mushrooms and spinach to get this nutrition info)
    single shell pie crust (2/3 of this recipe)

Directions

Thoroughly mix tofu, eggs flour and spices to taste. Add vegetables and scoop the whole mixture into a pie crust.
Bake 350 for about an hour until golden brown on top.
