Ingredients

    2 thin slices reduced fat swiss cheese
    (about 2 oz.)

    4 chicken cutlets (4 oz. ea.), 1/4" thick

    2 tbs. all purpose flour

    1/2 tsp. black pepper

    1 tbs. unsalted butter or margarine

    1/2 cup reduced sodium chicken broth

    1/4 cup dry white wine (or reduced sodium chicken broth)

    1/2 tsp. dried basil

    Chopped fresh parsley and fresh oregano sprigs for garnish

Directions

1) Cut each cheese slice in half: place 1 half on top of each cutlet. Starting with a short end, tightly roll up cutlets, jelly roll style. Tie securely with string.

2) On waxed paper, combine flour and pepper. Mix well. Add cutlets: toss gently to coat.

3) In a large nonstick skillet, melt butter over medium heat. Add cutlets: cook, turning frequently, until golden, about 3 minutes.

4) Add broth, wine, and dried oregano to skillet. Increase heat and bring to a boil. Reduce heat to medium-low: simmer until chicken is cooked through and sauce is slightly thickened, about 10 to 12 minutes. Place on a serving plate: remove string. Garnish with parsley and oregano sprigs.

*note: regular chicken breasts can be used. Just lay between 2 sheets of plastic wrap and pound with meat mallet to 1/4" thickness.

Serves 4

This Chicken dish is excellent served with brown rice and warm crusty rolls.

    Incredible!
    Made this last night for dinner, everyone loved it! Didn't use the swiss cheese or wine though. Used turkey cutlets, left them as they came out of the package (didn't roll and tie with string) coated them in the flour mixture and followed the rest of the recipe instructions. Will make again soon! - 6/28/11

    Im so glad you liked the recipe! My husband likes this recipe but isn't crazy about the swiss cheese. Maybe I will try it your way for him and the original way for me! He will be happy!
