Introduction
This recipe is only for the chicken fajita filling, as the basic ingredients are always the same, but I use different tortillas each time I make this. You can calculate the extra calories for tortillas and sour cream separately to get a more accurate reading. Ingredients

200g chicken breast, cut into strips
1 clove garlic, crushed
1 large onion, sliced
1 green pepper, sliced
1 red pepper, sliced
400g tin chopped tomatoes
½ tsp dried chilli flakes
½ tsp dried oregano
½ tsp dried basil
Directions
Spray a non-stick frying pan with 1-cal cooking spray and add the chicken. Cook for 2-3 minutes until the chicken is sealed and begins to brown.
Add the onion and garlic and continue cooking for another 2-3 minutes, adding a little water to the pan, if necessary.
Add the peppers, tomatoes, chilli and herbs and bring to a simmer. Cook for 10-15 minutes until the chicken is thoroughly cooked and the sauce has reduced.
Serve in warmed tortillas with sour cream or, for fewer calories, use low-fat creme fraiche or plain yoghurt.
