Ingredients

    Lite Tofu, extra firm, 1 block
    Brown Sugar, 2 tsp
    Almond Butter, 4 tbsp
    Soy sauce (shoyu), low sodium, 2 tbsp
    Spinach, fresh, 2 cup
    Eggplant, fresh, .5 eggplant, unpeeled

Directions

Mix together the brown sugar, almond butter, and soy sauce in a small bowl. Once well mixed, microwave for 30 seconds to heat.

Dice the eggplant into small pieces.
Cut or rip (your preference) the spinach into smaller pieces.
Dice the tofu

Mix everything in a sauce pan and heat at medium for 10-15 minutes well stirring (and flipping the tofu) frequently.
