Ingredients
-
1 lb Raw Blanched Peanuts
4 TBSP Pure Peanut Oil
4 TBSP Bob's Red Mill Flax Seed Meal (optional)
Directions
Put PEANUTS with 4 TBSP of the PEANUT OIL into the nut roaster (see picture) on medium heat.
Roast PEANUTS stirring constantly for 9 minutes (or to desired level of golden brown, I prefer dark golden as pictured).
Remove from heat and keep stirring for 1 minute more then pour into a heat proof (pyrex) bowl to cool.
Once cool enough to handle add the remaining 3 TBSP of PEANUT OIL and run through juicer (I use an Omega with the grinding blank installed).
After all the PEANUTS have been run through the juicer stir in 4 TBSP of FLAX MEAL* and run through the juice once more.
Stir well and put into jars/containers and place in the fridge; it will keep for about 1 month in the fridge. I find it usually is doesn't last that long, it's delish!!
And there ya' go, delicious, nutritious homemade peanut butter with a little extra goodness thrown in. ENJOY!!!
* This can be prepared without the flax and you will save a few calories, but you will remove the goodness of the flax if you don't use it!
