Ingredients

1 cup uncooked Pearl Barley
3 tbsp Extra Virgin Olive Oil
1 medium Onion, chopped
2 stalks celery, chopped
2 cups fresh mushrooms, chopped
1 clove garlic, minced
2 tsp tomato bouillon
4 1/2 cups boiling water
1 (12 oz.) pkg frozen corn
1 (16 0z.) pkg Cole Slaw Mix
2 tsp parsley flakes
1/4 cup slivered almonds
salt & pepper to taste
Directions
In large saute pan, heat olive oil and roast raw barley until golden colored. Stir in onions, celery, mushrooms and garlic. Cook until vegetables are tender. While vegetables are cooking, bring water to a boil and add tomato bouillon. Pour in 2 1/2 cups bouillon mixture to vegetables and cook at medium heat on stove top for approximately 30 minutes or until liquid is absorbed.
Preheat oven to 350 degrees. Add in frozen corn, cole slaw mix, parsley and remaining bouillon mixture. Bake in oven an addition 45-60 minutes and barley is tender. Sprinkle with almond slivers and serve.
