Ingredients

1 pound Whole Wheat Rotini Pasta
4 ounces Reduced Fat Mozzarella Cheese
1/2 jar (8 ounces) of Spaghetti Sauce
1/2 cup Diced Onion
4 Garlic Cloves
2 tablespoons Olive Oil
4 Zucchini
Directions
Boil water for pasta.
Saute onion and garlic in the olive oil in a large pan on medium heat.
Slice Zucchini lengthwise and shred in a food processor or by hand. (A food processor makes VERY quick work of these)
Add pasta to the boiling water and cook according to package directions.
Add Zucchini to the pan with the onion, garlic, and olive oil.
Shred Mozzarella cheese.
Add Spaghetti sauce to the vegetables and mix well. Turn the heat down to low.
Drain pasta and pour it back into the pot.
Add the sauce and vegetables to the pot and mix well.
Plate and top with mozzarella. Enjoy!
This makes 8 servings. You could easily exchange Zucchini for another fruit or vegetable when it's not in season. Please let me know if you try another combination that works well!
