Introduction

Ingredients

1/2 small box fetacinni pasta
1/2 pound cooked shrimp
1/2 bag fresh spinach
1/3 stick butter
1 1/2 c. Italian blend shredded cheese
1/2 c. parmesan
1 c. 2% milk
6 oz white wine
Tsp. each: salt, cracked black pepper, oregano, basil, olive oil, minced garlic
Directions
Cook pasta with olive oil, salt and basil in water.
While you're waiting...
Bring milk and butter to low simmer.
While you're waiting...
In separate pan, pour wine over spinach and heat till wilted.
Add cheeses, oregano, pepper to milk mixture and stir constantly until creamy, then add spinach mix and stir, reduce heat. Add cooked shrimp.
Drain pasta, toss in sauce and serve.
Makes 8, 1 cup servings.

This was great!! I made a few changes. I cooked the shrimp in olive oil with chopped garlic and sliced mushrooms. I also used 1 1/2 to 2 cups grated parmesan/romano cheese since I didn't have any of the Italian blend shredded cheese. This recipe is a keeper and I will make it again. Thanks - 1/11/15
