Introduction

Ingredients

    10 ounces italian sausage (use turkey for even lower calorie count)
    1 cup onion
    3 tsp garlic
    1 cup water
    1.5 cans of diced tomatos (I use the kind with spices already added)
    2 cans of any kind of white beans
    1 tbsp oregano
    2 cans of non fat chicken broth
    4 cups of fresh spinach

Directions

Start with the italian sausage and onions. Saute both in a fry pan until fully cooked. Drain the grease. Add 1 cup of water and stir well. Let simmer for a couple minutes. Then transfer the meat/onion mixture to the crock pot set on low. Add the garlic, the oregano, the tomatos, the chicken broth and the drained white beans. Stir. Put on the lid. And then go enjoy your day. When you arrive home, this inviting soup will be almost ready for you. Ten minutes before serving, add the spinach.
