Ingredients

    1 medium-sized head, red cabbage
    2 tart apples
    2 Tbsp. butter (or oil)
    1 medium-sized onion, sliced
    3 cups water
    1/2 cup apple cider vinegar
    9 packets Splenda
    1/2 tsp. salt
    1/2 tsp. black pepper
    2 cloves

Directions

Wash cabbage, drain; cut as for coleslaw.

Wash and core apples; cut in small pieces.

Heat butter in large saucepan and saute onion and apples 3 or 4 minutes.

Add water, vinegar, sugar, salt, pepper, and cloves. Stir; bring to a boil. Add cabbage. Cover and let simmer 45 minutes, or until tender.

Can be made ahead and reheated.

serving size = 1 cup

    I have never, EVER had a better red cabbage! Have had it with venison sausage and also with turkey ham to make an entree, but also makes a great side dish on its own. - 8/8/10
