Introduction

I found this recipe somewhere and tweeked it a but for our liking. This is a tasty white chili but can be spiced to taste by adding jalapeņo pepper .This is best cooking on low for 7-8 hr - too short and the beans won't break down enough to thicken the chili - can use turkey leftovers in place of chicken as well. Ingredients

    3 C cooked chicken breast - boneless skinless
    1 C onion - diced
    900 ml chicken broth - fat free (1 carton)
    3 cans white kidney beans drained and rinsed
    1 zucchini peeled, chopped in large chunks
    1 hot banana pepper (or a mild pepper may be substituted)
    1 tsp black pepper
    1 tsp flaked chili pepper
    3 tsp cumin
    3 cloves garlic minced
    1 tsp oregano
    ............................................
    when serving Top each bowl with
    1 tbsp Parmesan cheese (included in nutritional info)

Directions

Mix all ingredients in crock pot, except parmesan cheese. cook on low for 7 hr, you can cook on high for 4 hours but I prefer it on low - don't under cook or the beans won't break down and thicken the chili (can also slightly mash them once cooked)
Pour into bowls top with 1 tbsp parmesan cheese
