Introduction

Great as a protein-packed lunch for work. I just love 5-ingredient dishes. There's no cholesterol, and no salt added. Simple complementary protein dish. Great as a protein-packed lunch for work. Number of Servings: 24

Ingredients

    1-1/3 lb. Lamb shoulder bone-in "chops"
    4C dried Mayacoba (yellow) beans
    2.5C Quinoa
    1/2C dried minced onion
    3T Granulated Garlic

    Garnish (included in nutrition): 24t Cojita cheese

Directions

1. Soak the beans overnight, changing water.
2. Place bony chops at bottom of at least 6qt crock pot
3. Add drained beans, quinoa, onion and garlic
4. Fill with water almost to brim
5. Cook on crock pot high for 6 hours

At serving time, add 1t Cojita cheese per C of stew
6Qts means 24-1C servings

    Red meat is one of the major sources of cholesterol, so I think you may have made an error in your comment. It shouldn't be too bad given that the recipe also includes beans and quinoa - but it cannot be zero cholesterol. - 8/21/10
