Introduction

Lots of flavor, easy to make! Lots of flavor, easy to make!
Number of Servings: 8

Ingredients

    1 tbsp Olive Oil
    11/2 cup chopped onions
    3 tsp. garlic, or more to taste
    1tsp. cumin
    2 cans diced tomatoes, not drained
    2 cups cooked, chopped chicken breast (I baked it with cajun seasonings)
    2 cans black beans, drained and rinsed
    1 tsp crushed red pepper, if desired

Directions

Heat olive oil in a large saucepan or dutch oven. Add onion, cook for approximately 5 minutes or until tender, stirring occasionally. Add garlic and cumin, cook for 2 more minutes. Add remaining ingredients plus 1 can of water. Bring to boil, cover and simmer over low heat 20-30 minutes before serving.
