Ingredients

1 7 oz. jar Roasted Red Pepper, chopped
1 6 oz jar Artichokes in vinegar, chopped
2-4 cloves fresh garlic, minced
1/3 c fresh parsley chopped
juice of 1/2 lemon (fresh!)
1/3 cup freshly grated parmesan cheese
4 oz capers
2-4 oz olive oil
Directions
Combine all ingredients and refrigerate until needed. Doubles easily. Make a few hours in advance or the night before to allow ingredients to marinate. No need for salt, pepper or anything! Great with whole wheat crackers, and probably over salmon or something. It is my go anywhere dip; everyone loves it!
