Introduction

Since I don't really care for the taste of fish and the parmesan/bread crumbs I would normally use is to high in sodium for me I had to come up with something different and this is the result. Number of Servings: 1

Ingredients

    4oz Tilapia fillet (I use Tilapia by Aqua Star and there are 2 pieces in each pkg)
    2 TBSP Sugar Free Peach Preserves
    Salt and Pepper optional (since I didn't use salt it is not included in nutritional values)

Directions

Spray a small saute' pan with cooking spray.
Place over medium heat,
Salt and pepper fillet to taste and cook for 5 min.
Spray side that is up with cooking spray and turn, cook for another 5 min. During last 2 minutes spoon peach preserves over the fillet and let it melt into the fillet.

Makes 1 serving
