Ingredients

    200 grams light tofu (about 1/3 of a package)
    1 cup chopped swiss chard
    chopped fresh ginger
    1/2 cup chopped leeks (white & light green parts only)
    2 cloves garlic, minced
    1 tsp sesame oil
    1/4 cup parsley
    2/3 cup wild rice (cooked)
    1/2 cup black beans, rinsed well
    1/4 cup sun dried tomatoes, chopped

Directions

Steam-saute tofu with leeks, garlic and ginger, then add greens & saute until greens are tender, then stir in sesame oil.
Meanwhile, combine wild rice, black beans, sun dried tomatoes and parsley, season with lemon juice and zest, plenty of pepper.
Serve together.
