Ingredients

    1 Tbsp butter
    1/2 cup onion
    1/2 cup celery, chopped
    1 cup tap water
    2 large potatoes, peeled and chopped
    1 cup of canned clams, drained
    2 cups nonfat milk
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1/2 cup cold water
    3 TBSP flour

Directions

First get out a good sized soup pot. Melt the butter in it and saute the onion and celery until they are tender. Add 1 cup of water and the potatoes. Cover and simmer for about 15 minutes. Add the clams, milk, salt and pepper to the potatoes. Heat gently and simmer for a few more minutes.

In a pint sized jar, combine 1/2-cup cold tap water and flour. Screw on the lid. Shake and shake the jar until the flour is dissolved in the water. Pour this mixture into the pot of hot soup. Stir it up and bring the whole thing to a slow boil. Boil and stir for a full minute, or until everything is nicely thickened.
