Introduction

Hearty crock pot soup that tastes more like a chili to me. I love making this when the weather gets cooler and it's almost time! This is good served over tortilla chips or with crackers or corn bread. Hearty crock pot soup that tastes more like a chili to me. Ingredients

    2lb. Hamburger (extra lean) browned and drained

    1 onion

    2 packages lower sodium taco seasoning

    2 cans rotel tomatoes with chilis (NOT drained)

    2 cans Bush's chili beans (NOT drained)

    2 cans tomato soup

    2 cans corn (NOT drained) can use no salt added

    Optional for serving:
    tortilla chips
    sour cream
    shredded cheese
    chopped fresh onion

Directions

Brown hamburger and onion, drain.

In 5qt crock pot add all ingredients (including the juice in the cans).

Add water to the desired thickness. (I usually do not add water because I like it a thicker more chili-like consistency)

Cook on low for 8 hours.

To serve, crush tortilla chips in bottom of bowl, spoon soup on top. Add sour cream, shredded cheese and onions as desired.

Makes a ton of servings, I calculated it at 15.
