Introduction

Ingredients

    Lettuce leaves - iceberg or bibb, 9 large
    Tuna - solid white albacore drained, 15 oz
    3 large hardboiled eggs diced
    Chili Powder, 1 tsp
    Black pepper, 1/2 tsp
    Salt, 1/4 tsp
    Light Mayonnaise, 5 tbsp
    Lemon juice, 1/4 tsp
    Minced onions, 1 tbsp

Directions

Combine all ingredients except lettuce. Put 1/4 cup of tuna salad mixture in lettuce leaf that has been patted dry to prevent dripping.

Great variations. Add nuts or chow mein noodles for crunch. Add any of your favorite sauces (soy, chili garlic, buffalo wing sauce, ranch).

Enjoy.
