Introduction

This is a great, filling, healthy one dish meal that can be prepared in no time! It's a favorite with friends and family and they don't even know it's good for them! Ingredients

    2 oz. (dry) whole wheat pasta (I like to use a gemelli or a rotini for this recipe)
    3 oz. salmon filet
    5 oz. fersh spinach
    1 T. light butter
    4 basil leaves
    1/2 oz. fontina cheese
    butter flavored cooking spray
    garlic salt to taste

Directions

Boil salted water for pasta and cook until al dente. Meanwhile, spray both sides of the salmon with butter flavored cooking spray and sprinkle with garlic salt. Broil at 375 for approximately 5 minutes per side or until fish flakes easily with a fork. Sautee fresh spinach with butter flavored spray and garlic salt to taste. Melt butter in a small saucepan or in the microwave. Coarsely chop basil leaves and add to melted butter. To serve, plate spinach, top with pasta, then grilled salmon, drizzle basil butter and shaved fontina cheese overtop. Makes one serving.
