Introduction

These are SO moist and taste SO good! My kids even loved them and they are super picky eaters!! These are SO moist and taste SO good! My kids even loved them and they are super picky eaters!!
Number of Servings: 18

Ingredients

    8 T. or 1 stick margarine
    3/4 c. sugar
    2 eggs
    1 c. flour (all purpose)
    1 t. baking soda
    1/2 t. salt
    1 c. whole wheat flour
    1 1/2 c. bananas, mashed
    1 t. vanilla
    1/2 c. walnuts, shelled, coarsely chopped



Directions

1. Preheat oven 350*, spray muffin pan with non-stick spray.

2.Cream butter and sugar till light and fluffy. Add eggs one at a time, beating well after each addition.

3.Sift all flour, baking soda, and salt together, stir in whole wheat flour and add to creamed mixture, mixing well.

4. Fold in bananas, vanilla, and walnuts.

5. Pour approx. 1/3 cup into muffin pan. Bake for 14-18 minutes or until golden brown. Cool in pan for 5 minutes.

Makes 18 regular sized muffins

    Very Good
    Good recipe. I made some modifcations that worked well. I used half the sugar, substituted coconut flour for the all-purpose flour, added 1/4 cup cocoa powder and also needed to add 1/2 a cup of apple sauce because I didn't have enough mashed banana to moisten. Tasty! - 3/11/18
