Ingredients

    *Peanut Oil, 2 tbsp
    Pepper, red or cayenne, 0.5 tbsp
    *Onion Raw, 1 cup , sliced
    Curry powder, 1.5 tbsp
    Ginger, ground, 2 tsp
    *Garlic -2 Clove,
    *Coconut, dried, unsweetened, 2 tbsp
    *boneless chicken breast - raw, 32 oz
    *Coconut milk (light), 1 cup
    Salt, 1 tsp

Directions

Heat oil in large nonstick pan or wok on medium high heat add the dried chili peppers and onion, and cook until the onion is browned (about 5 minutes).


Add ingredients curry- coconut to the pan, stirring for 2 minutes.


Add the chicken and cook until it's browned, about another 5 minutes.


Lastly, add the coconut milk and reduce heat to medium, simmer for about 20 minutes until the chicken has absorbed all the flavors.


Garnish with black pepper and fresh cilantro. Serve with rice
