Ingredients

2 Cups flour
1 1/4 tsp pumpkin pie spice
2 tsp baking powder
1 tsp baking soda
1 cup splenda sugar
1/3 cup smart balance margarine
1/2 c splenda brown sugar
1 c egg beaters
1 15 oz can pumpkin pie filling
1 large carrot, finely shreded
Cream cheese topping:
8 0z light cream cheese, softened
1/4 cup splenda
1 Tbsp skim milk
Directions
Pre heat oven to 350 degrees. Grease 24 mini muffin tin.
Prepare filling:
In small bowl, combine flour, pumpkin spice, baking powder and baking soda.
In large bowl, beat sugar, butter and brown sugar until crumbly. Add eggbeaters, pumpkin pie mix and carrot. Beta until well blended. Add flour mixture and mix until well blended. Than take and fill up each mini muffiin spot, to the top.
Prepar cream cheese topping:
Mix together cream cheese, sugar and milk until thouroughly blended.
Drop a dap on each of the mini muffin batter mixes.
Bake for 25-30 minutes or until cake tester ( inserted in center) comes out clean. Cool .
Makes 64 mini muffins.
