    Butternut Squash, 3 cup, cubes (remove)
    Chicken Broth, 4 cup (8 fl oz) (remove)
    Curry powder, 3 tbsp (remove)


Preheat oven to 350 degrees

Place butternut squash on baking sheet and sprinkle with curry powder. Roast for 30 to 40 minutes until squash is soft.

Remove from oven and place in saucepan. Add chicken broth and bring to boil. Use immersion blender, food processor or blender to blend the soup.

Serves four
