Ingredients

    1 cup all purpose flour
    1 cup whole-wheat pastry flour
    1 cup packed brown sugar
    1 tbsp baking powder
    1 tsp ground cinnamon
    1/4 tsp baking soda
    4 egg whites (naturegg)
    1/2 cup buttermilk (Quebon 0,25%m.f.)
    1/3 cup unsweetened applesauce (Mott's Fruitsations)
    1tsp vanilla
    1 cup mashed ripe bananas (about 2 medium)
    1/2 cup chopped walnuts

Directions

Preheat oven at 350. Spray a 9"x5"x3" loaf pan with no-stick spray and set aside.
Mix dry ingredients make a well in center.
In different bowl beat egg whited until foamy, stirin buttermilk, apple sauce and vanilla. then stir in bananas until well combined.
Add banana mixture to flour mixture and stir just until moistened.
Fold in the walnuts.
Pour the batter into the prepered pan. Bake for 45 to 55 minutes or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes. Then remove the bread and cool completely on a wire rack before slicing.

Makes 12 (80g) serving.
