Introduction

A very low fat/low sodium beef taco meat to use in Tacos, Taco Salads or any recipe that requires Taco-spiced beef. Taco shells and other filling NOT included in Calorie Count. Ingredients

    1 lb Ground Round -- I take a round steak and have the store cut off all visible fat and grind it up for me. Safeway does this at no extra charge. Very low fat -- about 4% is my best guess
    1/2 large Onion, minced, about 3/4 cup
    Low sodium Taco season packet (I use McCormicks)
    Red or Green bell peper, 1 cup, chopped
    1/4-3/4 cup Water (depending on the amount of juice from the pepper and the onion)

Directions

Brown meat until almost done then add onions and bell peppers. Cook until meat is done. What little fat there is, onions and peppers absorb, so usually no need to drain. Add Taco seasoning and water. Bring to boil and then simmer for 5 minutes.

Freeze Leftovers -- extend with 1/2 can refried beans for an additional meal.
