Introduction

I cook steel cut oats each Sunday evening and divide the oatmeal into 10 containers, which I refrigerate. My husband and I take them to work each day for a healthy breakfast. Microwave about 2 minutes to warm. Any fresh or frozen fruit can be substituted for the pumpkin. Ingredients

    2 cups steel cut oats
    10 cups water, divided
    5 scoops whey protein powder, vanilla flavored (MRM 100% natural)
    1 1/4 cups ground flax seed meal
    1 1/2 cups Ideal sugar substitute (could use Xylitol or Splenda)
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. pumpkin pie spice
    1 tsp. vanilla
    1 can pumpkin (not pumpkin pie filling)

Directions

Bring 8 cups of water to boil in large stock pot. In a bowl, protein powder into 2 cups of water. Add protein powder mixture to boiling water. Stir in steel cut oats and all other ingredients, except pumpkin. Bring to a boil. Reduce heat to low. Cover and simmer for 20 minutes. Stir in pumpkin and serve immediately, or divide into 10 individual containers and refrigerate.
