Ingredients

    1 can (15 ounce) black beans, drained
    1 bag dried pinto beans, soaked and drained
    1 can (15 ounces) solid-pack pumpkin
    1 can (14-1/2 ounces) diced tomatoes with garlic and onion (such as Red Gold), undrained
    24-32 ounces of hot water (fill pumpkin can and bean can with water, dump)
    1 tablespoon Better Than Bullion Veggie Bullion paste (equivalent of one serving veggie bullion cube)
    2 tablespoons dried onion flakes
    2 tablespoons dried garlic minced
    4 teaspoons chili powder
    1 teaspoon cinnamon
    1/4 cup diced bell peppers

Directions

Put soaked pinto bins into the crock of a a 5-qt. slow cooker; dump in the other ingredients. Fill pumpkin can and black bean can with hot water, pour over ingredients in slow cooker. Stir together. Cover and cook on low for 5 or more hours or until heated through and thickened.

Yield: 10 servings (2-1/2 quarts)
