Ingredients

    1 ¼ lb boneless, skinless chicken breast or thighs (or pork)
    6 to 9 Baby carrots
    2 medium potatoes
    2 green or red peppers
    2 medium onions
    ½ pkg frozen green beans
    2 cloves Garlic, finely chopped
    ¼ tsp Pepper
    2 Bay leaves
    ½ cup Soy sauce
    ½ cup Vinegar
    1 cup water
    2 Tbsp cornstarch

Directions

Cut chicken into ¾ inch cubes. Add meat to medium sauce pan, along with garlic, pepper, bay leaves, soy sauce, vinegar, and water. Simmer until meat is almost tender, about 30 minutes. Meanwhile, cut carrots, potatoes, peppers, and onions into large pieces. Place carrots, potatoes, and onion in pot with the chicken and simmer for about 15 minutes. Add peppers and green beans, and continue cooking covered until veggies are tender crisp.

Stir 2 Tbsp of cornstarch with a little water, and slowly add to broth, stirring constantly, until broth becomes clear and slightly thick. Remove from heat.

(Can be divided between 6 containers to freeze. May want to pile in some extra frozen veggies. Microwave for about 6 minutes to serve.)
