Introduction

This actually came from one of those McCormick Recipe Inspiration cards with the seasonings. It calls for 6 chicken thighs and I replaced them with 3 large chicken breasts, beaten and cut in half. Ingredients

    6 chicken breasts, beaten and halved
    About 4 potatoes- diced, skin optional (the card calls for 11/2 lbs of red potatoes- which I didn't have on hand)
    2 tsp paprika
    11/2 tsp crushed rosemary
    1 tsp minced garlic
    1/2 tsp black pepper
    2 tbsp olive oil

Directions

Preheat the oven to 425
Mix oil and spices together.
Add chicken and potatoes and toss to coat
Arrange in a single layer in a preheated foil-lined baking pan
Roast at 425 for about 30 minutes- until chicken is cooked through and potatoes are tender

Makes 6 servings
